Founder Friday: Earth Day, Mother Earth, Plant-Based with Erica Reid

Share

Dear nécessité,

Happy Earth Day, sunshine. Every day to me is earth day; after all, it is where we rent to live full-time. I am so thankful to be on earth on this day and fed well, nourished, and carried daily by Mother Earth. Thank you, GOD. What a great season chosen to have us all honor and celebrate Earth Day. Spring is a perfect time of year to do so. There is a fresh breeze in the air, beautiful colors from the fruits, vegetables, flowers, and tree branches, and the sky has a prettier blue hue.

That is probably part of why it is celebrated in April, along with it being between Spring break and exams from the initial launch of Earth Day in the 70s. So why do we only respect Mother Earth one day a year in America? Why not care for her daily and cherish her internally in each of us?  Why do we liter and spit all on her? Our public restrooms, our train stations, trash overflowing from trash cans outside, the streets covered with glued gum and mashed animal business that people have stepped in more than once- why are these not kept to perfection with pride and honor every day, all day? Do we not care? Do we lack pride? Love? Respect? What is it? Imagine how much more she would shine if we all did our part.

I used to throw my gum out the car window (when I did not know better), but now, I do not care how biodegradable something is; I am not putting it on her. If paper blows out of my hands, I try to put my foot on it to hold it down so it does not blow away and land somewhere that creates litter.

Trash has a home too. (I am also the one that will not kill a fly or step on an ant). We are all part of the Earth team as we reside here temporarily and together as roommates. We must do our part and help make her pretty and stay healthy and vibrant. It is simply our responsibility and part of our give-back moment. Mother Earth has been so healing, available, and dependable to me. I am so grateful for her. She has never disappointed me, but I know we have truly disappointed her.

Remember how gorgeous she looked by the end of summer 2020? The world was not polluting her the same way. She had a required break. She was able to breathe and polish herself up. I always said during that time, “GOD is restoring his masterpiece.” (Every day, I said that, along with some other stuff). Mother Earth has also provided me with the nécessités through each health challenge! Being able to juice daily is a gift from Mother Earth; I know this, and therefore, I do not take her for granted. The health challenges I have faced each time led me to Mother Earth for support. For the mental work, the healing environment, and the way I eat since the 90s’, she was my backbone and still is.

Plant-based eating works so well for me. It aligns with Earth Day and Mother Earth and me internally. What is inside of me comes out through my actions and my behavior. My energy is what it is due to the energy I am consuming. Food has energy too. Earth supplies me with my food, not man.

I learned the difference, as before, I never thought about it, nor did I know the difference. Man puts it in a package, and GOD puts it in the ground. Today is what I have, and this is how I eat today. It is my choice. My health got me here. Do what works for you. The goal is to find and create your healthy balance and stay in that homeostasis state of health.

Are you looking to prepare a healthy meal for Earth Day, loaded with nutrients, but need help deciding what to make? I am here to help. Here is one of my favorite plant-based recipes I created years ago and added to my 2nd book, Shut Up and Cook!

It is my favorite because it’s delicious, easy, and satisfying. I was making our vegan/veggie bowls in the early 2000s and never stopped. I eat bowls often.

Make this recipe work for you. After all, you are the one going to eat it. Take out or add ingredients that you love and appreciate. The foundation is already there. Have fun. Do not be afraid. It is your way; therefore, it is the right way.

Happy Earth Day, beauty! You are a nécessité
