Fall Baking: Gluten Free Apple Cake

Fall and apples just go together and whether it’s a warm apple pie, apple cider, candied apples or mele cotte we can’t help but love the sweet- tart flavors of this fruit that entrance our tastebuds. Check out this delicious gluten-free apple cake recipe that is worthy of an inspiring trip to the orchard for apple picking. Enjoy! 

Ingredients

Wet:

  • 1 cup rice milk
  • 2 tbsp applesauce
  • 1/3 cup sugar
  • 1/4 cup coconut oil or use 3 tbsp applesauce to make oil-free
  • 1 tsp vanilla extract

Dry:

  • 3 cups Gluten Free Flour 
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 apple small diced
  • 1 tbsp maple syrup
  • 1/4 tbsp coconut sugar

Method Of Preparation

  1. Preheat the oven to 350 degrees. Line a pan with parchment. In a bowl, mix in the wet ingredients for the cake, until the sugar is fully combined. Add dry ingredients to wet mixture. Fold together. 
  2. Add more flour if needed 1 tbsp at a time to make just slightly thick batter. In another bowl, drizzle maple over chopped apple and toss to coat. 
  3. Add the apple to the batter and fold in. Pour into the parchment lined pan and even it out. Sprinkle coconut sugar over the batter. 
  4. Bake at 350 degrees for 35 to 45 mins until cooked through. Cool for 10 mins, then remove from pan.
